  • 1 medium orange, keep the zest and juice
  • 3tablespoons maple syrup
  • 1tablespoons allspice
  • 40grams flaked almonds
  • 1/3 cup whipped cream
  • 1teaspoons vanilla extract

Description

This recipe feels quite festive with its seasonal fruit and aromatic spices.

Method

Step 1 of 5

Pre-heat the oven to 190°C/170°C fan-forced.

Step 2 of 5

In a small baking tray, place the apricots skin side down.

Step 3 of 5

In a bowl, mix together the orange, zest, maple syrup and all spice.

Step 4 of 5

Cover the apricots with the sauce and bake in the oven for 25 minutes. You can baste the apricots with the juices if needed halfway.

Step 5 of 5

Just before the apricots are ready to serve, whip the cream with the vanilla and serve on top of the apricots and top with flaked almonds.
