- 1 cinnamon stick, split in half
- 6 medium Packham pears
- 2 cm piece ginger, peeled
- 6 cardamom pods, bruised
- 2 English breakfast teabags
- 1 cup caster sugar
- 2tablespoons pistachios
Description
Enjoy these syrupy spiced pears warm, with a side of ice-cream and pistachios on top.
Method
Step 1 of 4
In a medium saucepan, combine 4 cups water with sugar, teabags, ginger, cinnamon and cardamom. Stir over high heat to dissolve sugar, then bring to the boil. Discard teabags.
Step 2 of 4
Peel pears, leaving stems attached. Add pears to liquid and add more water, if needed, to cover. Cover with a round of baking paper (cut to the size of saucepan) and weigh down with a small heat-proof plate to keep pears submerged. Reduce heat to medium and simmer gently for 20 minutes or until pears are soft throughout. Remove pears from liquid and set aside.

Increase heat to high and boil liquid for 15 minutes or until reduced by half to make a thin syrup.
Step 4 of 4
Place pears in a dish and spoon over syrup. Sprinkle with pistachios and serve.
