- 1/4teaspoons dry yeast
- 1 2/3 cup plain flour
- 1 cup vegetable oil (for shallow frying)
- 60grams butter, at room temperature
- 2 cup watermelon, diced
- 1/2 cup semolina
- 1/4 cup honey
- 2teaspoons caster sugar
- 1/4 cup pistachio kernels, chopped

Method
Step 1 of 3
Line two baking trays with baking paper. Combine flour, semolina, sugar and yeast with 1 tsp sea salt flakes in a bowl. Add 3/4 cup hot water. Stir to combine. Turn mixture onto a lightly floured surface. Knead for 10 minutes or until smooth. Divide into 8 portions. Roll each portion into a ball and place on a tray. Cover loosely with plastic wrap and set aside in a warm place for 30 minutes.
Step 2 of 3
Divide butter into 8 portions. Roll 1 portion of dough out on a lightly floured surface into a 20cm square. Dot with 1 portion of butter. Fold one of the sides a third over the dough. Fold other side over, forming a rectangle. Fold the short side a third over dough, then fold other short side over, forming a square. Transfer to tray. Repeat with remaining dough and butter.
Step 3 of 3
Heat oil in a non-stick frying pan over medium heat. Cook, in batches, for 3 minutes each side or until golden and crisp. Transfer to a plate. Keep warm. Serve drizzled with honey and topped with pistachio and watermelon.
