Description

Creamy ricotta is a match made in heaven with sweet griddled peaches and a drizzle of honey.

Method

Step 1 of 3

Place a large griddle pan on medium high heat. Brush the peach halves with half the olive oil on the cut side and place cut side down in the griddle pan for 2 minutes or until lightly charred. Remove and set aside.

Step 2 of 3

Brush the remaining oil on the sourdough and cook for 1-2 minute on each side in the griddle pan.

Step 3 of 3

Slice the peaches into wedges. Spread a thick layer of ricotta on each sourdough toast, top with peach slices, cracked black pepper and a drizzle of honey and serve.
