For the dressing
  • 1 ripe mango, roughly chopped
  • 1/2 lime, zest and juice
  • 3tablespoons olive oil
  • 3 mint leaves, roughly chopped
  • 1 handful coriander leaves, roughly chopped
  • 1 handful mixed salad leaves
  • 1 shallot, finely chopped
  • 350grams fresh crab, white and brown meat separated
  • 1 ripe avocado, sliced lengthways

Description

With fruity mango, this makes a lovely summer lunch. Buy the crab the day you make it.

Method

Step 1 of 2

To make the dressing, put the mango, lime zest and juice, and olive oil in a food processor and blend until smooth. Add a little water if it’s too thick.

Step 2 of 2

For the salad, mix together the herbs and salad leaves. Add the shallot and toss in a little of the dressing. Divide the salad between 4 plates and arrange a spoonful each of the white and brown crab meat on top. Serve with the avocado slices and the remaining dressing on the side, and slices of warm soda or brown bread and butter.
