  • 1/2 cup buttermilk
  • 1 avocado (sliced)
  • 1 small fennel bulb (fronds reserved)
  • 4 radishes (thinly sliced)
  • 1 iceberg lettuce, outer leaves removed, base trimmed
  • 1/4 cup sunflower seeds (toasted)
  • 150grams natural Woolworths hot smoked salmon (flaked)

Method

Step 1 of 2

Slice lettuce into thick steaks. Arrange lettuce, fennel, radish, avocado and salmon onto plates.

Meanwhile, to make the wasabi dressing, combine all the ingredients in a bowl and whisk until smooth. Season with salt. Drizzle dressing over salad and serve topped with seeds and reserved fennel fronds.
