  • 2tablespoons currants
  • 1/2 small red cabbage, finely shredded (approx. 6 cups)
  • 2tablespoons mint, shredded
  • 1 red onion, finely sliced
  • 2 red apples, cored and cut into fine shreds
  • 1tablespoons honey
  • 2tablespoons white balsamic vinegar
  • 1tablespoons grain mustard
  • 4 slice country loaf mixed grain
  • 400grams prawns, cooked peeled

Method

Step 1 of 4

Chop and combine cabbage, apple, onion, mint, and currants in a large bowl. Toss well.

Step 2 of 4

Whisk balsamic with honey and mustard and pour over salad.

Step 3 of 4

Add cooked peeled prawns and toss to combine.

Step 4 of 4

Serve with a slice of crusty wholegrain bread.
