  • 1tablespoons tabasco sauce (dash)
  • 3kilograms tiger prawns, peeled and deveined
  • 2 avocados, peeled and sliced
  • 1 small red chilli, finely chopped
  • 1 sprig coriander (to serve)
  • 1tablespoons tomato sauce
  • 1 lime, juiced
  • 1 lime, cut into wedges (to serve)
  • 1 cup whole egg mayonnaise
  • 2 bunch rocket, washed and dried
  • 1 kaffir lime leaf, very finely shredded

Method

Step 1 of 3

Combine mayonnaise, tomato sauce, tabasco sauce, lime juice, shredded lime and chilli in a small serving bowl. Set aside.

Step 2 of 3

Arrange rocket on a large serving platter or in a large serving bowl. Add avocado and prawns. Top with lime wedges and coriander sprigs.

Step 3 of 3

Serve with the mayonnaise Note: To devein a prawn, use a small sharp knife to make a slit along the middle of the back to expose the dark vein, use your fingers to carefully pull the vein through the opening at the head end to remove.
