Spiced Prawns With Citrus Fennel Salad

- 500grams green prawns, peeled, tails intact
- 1 fennel bulb, thinly sliced
- 1/2 cup fresh mint leaves, torn
- 2 ruby red grapefruit (see tip)
- 1tablespoons moroccan seasoning
- 2 oranges
- 2tablespoons olive oil
Method
Step 1 of 4
Peel and segment grapefruit and oranges over a large bowl to catch juices. Place segments in bowl.

In a seperate bowl, combine seasoning and half the oil. Add prawns and turn to coat.
Step 3 of 4
Heat a large frying pan over high heat. Cook prawns, turning, for 3-4 minutes or until prawns are just cooked through.
Step 4 of 4
Meanwhile, add lettuce, fennel, mint, chives and remaining oil to bowl with citrus segments and juice and toss to combine. Serve prawns with salad.
