  • 24 large green king prawns (in shell)
  • 2tablespoons parsley leaves, to garnish
  • 2 limes
  • 1teaspoons ground coriander
  • 1teaspoons garam masala
  • 1tablespoons garlic paste
  • 1tablespoons olive oil
  • 1tablespoons chilli paste
  • 1tablespoons ginger paste

Method

Step 1 of 4

Combine pastes, oil, garam masala and coriander in a bowl. Halve 1 lime and squeeze juice into spice mix. Season with salt. Cut remaining lime into wedges.

Step 2 of 4

Split prawns lengthways along the back and devein. Lay prawns into a shallow tray. Spread spice paste all over prawns. Set aside for 10 minutes to marinate. Preheat a barbecue on medium-high heat.

Step 3 of 4

Lay prawns, cut-side-down onto barbecue and cook for 2 minutes, then turn and cook for a further 1-2 minutes or until charred.

Step 4 of 4

Transfer to a platter, garnish with parsley and serve with lime wedges.
