  • 1teaspoons olive oil
  • 15grams unsalted butter
  • 50grams pancetta, excess fat removed, finely chopped
  • 500grams raw tiger prawns, peeled but tails left intact
  • 1 lemon, grated rind and juice
  • 1 large bunch watercress

Method

Step 1 of 2

Heat the oil and butter in a frying pan, add the pancetta or smoked bacon and fry for 3-4 minutes until crisp.

Step 2 of 2

Add the prawns and fry for 1 minute on each side or until they turn pink. Sprinkle over the lemon rind and juice and fry for a further 1 minute, then add the watercress and combine well. Divide between 4 plates and serve immediately.
