Tiger Prawns With Pancetta

- 1teaspoons olive oil
- 15grams unsalted butter
- 50grams pancetta, excess fat removed, finely chopped
- 500grams raw tiger prawns, peeled but tails left intact
- 1 lemon, grated rind and juice
- 1 large bunch watercress
Method
Step 1 of 2
Heat the oil and butter in a frying pan, add the pancetta or smoked bacon and fry for 3-4 minutes until crisp.
Step 2 of 2
Add the prawns and fry for 1 minute on each side or until they turn pink. Sprinkle over the lemon rind and juice and fry for a further 1 minute, then add the watercress and combine well. Divide between 4 plates and serve immediately.
