- 16 king green prawns, peeled, deveined, tails intact
- 2tablespoons fish sauce
- 2tablespoons coriander leaves (to serve)
- 1tablespoons ginger, finely grated
- 1/2 pineapple, peeled
- 2tablespoons rice wine vinegar
- 1 lime, wedges (to serve)
- 1 lime, juiced
- 2tablespoons reduced-salt soy sauce
- 2tablespoons caster sugar
- 2 long red chillies, deseeded, finely chopped

Method
Step 1 of 2
For the sauce, combine all sauce ingredients in a bowl and set aside. Cut pineapple into 3cm pieces (see tip). Thread 2 prawns and 2 pieces pineapple onto skewers.
Step 2 of 2
Preheat barbecue grill or chargrill pan over medium-high heat. Brush skewers with sauce and cook for 3-4 minutes, turning once, and basting often with sauce. Garnish with coriander leaves and serve with remaining sauce and lime wedges.
