- 3 lobsters
- 2tablespoons fish sauce
- 1 lime, rind finely grated
- 1/2 cup coconut milk
- 1 lemongrass, white portion of stalk
- 2tablespoons lime juice
- 2tablespoons palm sugar, grated (or brown sugar)

Method
Step 1 of 2
Using a sharp knife, carefully cut 3 lobsters in half lengthways. Clean. Spread crushed ice onto a large serving platter. Place lobster halves onto platter and serve with dressing below.
Step 2 of 2
For dressing finely chop the white portion of a stalk of lemongrass. Combine coconut milk, desiccated coconut, fish sauce, palm or brown sugar and finely grated rind and lime juice.
