  • 50grams butter, chopped
  • 1 large brown onion, finely chopped
  • 1 large orange, rind finely grated
  • 200grams rindless bacon, diced
  • 2tablespoons olive oil
  • 2 eggs, whisked
  • 1/2 bunch thyme, leaves removed
  • 3 garlic cloves, crushed
  • 3/4 cup walnuts, roughly chopped
  • 200grams dried figs, roughly chopped
  • 7kilograms free-range turkey
  • 8 cup gluten free breadcrumbs

Method

Step 1 of 3

Heat butter and oil in a frying pan over medium heat. Add onion and bacon. Cook for 8 minutes or until onion is soft. Stir in garlic and figs. Cook for 2 minutes. Remove from heat and cool.

Step 2 of 3

Preheat oven to 180°C. Line a large baking pan with baking paper. Transfer the onion mixture to a bowl. Add the breadcrumbs, orange rind, 1/3 cup of the orange juice, eggs, walnut, port and thyme. Mix well to combine.

Step 3 of 3

Fill front cavities of turkey with stuffing. Tie legs together with kitchen twine and tuck wings under. Place into pan. Brush with oil. Cook for 3 hours and 30 minutes or until cooked to your liking. To test, insert a skewer into the thickest part of thigh. If juices are pink, continue cooking until juices are clear. Transfer to a platter. Stand for 10 minutes. Serve.
