- 250grams baby octopus
- 1/3 cup white wine, save 2 tsp for later
- 1tablespoons olive oil
- 2teaspoons smoked paprika
- 1 medium red chilli, diced
- 3 cloves garlic, peeled and minced
- 1 medium lemon, sliced into wedges
- 3tablespoons parsley, fresh, chopped
- 1 pinch cracked black pepper
Description
Smoked paprika and chilli make this charred baby octopus delicious and spicy.
Method
Step 1 of 4
Place the octopus in a large bowl with olive oil, white wine, smoked paprika and garlic. Toss well and cover. Set aside to marinade for 30 minutes.
Step 2 of 4
Pre-heat the barbecue to the highest setting. Drain he octopus and tip the marinade into a small saucepan. Bring the marinade to the boil and cook until reduced, 1-2 minutes.
Step 3 of 4
Place the octopus on the grill and cook for 4-5 minutes, turning a couple of times, until the octopus is lightly charred and starts to curl.
Step 4 of 4
Serve with the marinade drizzled on top, cracked black pepper, parsley and lemon wedges.
