  • 20 green king prawns, peeled, deveined, tails intact
  • 3teaspoons fish sauce (for dressing)
  • 1 long red chilli, deseeded, finely chopped
  • 1/2 cup coriander leaves
  • 2tablespoons mint leaves
  • 2 spring onions, thinly sliced lengthways
  • 1/4 cup lime juice (for dressing)
  • 2 beef porterhouse steaks (about 400g)
  • 1teaspoons caster sugar
  • 1 sweet crunch lettuce, leaves separated
  • 1tablespoons vegetable oil (and 2 tsp vegetable oil for dressing)

Method

Step 1 of 3

For the dressing, combine ingredients in a screw-top jar and shake well to combine.

Step 2 of 3

Heat 2 tsp oil in frying pan over medium-high heat. Cook steaks for 2-3 minutes each side. Set aside, covered with foil. Add remaining oil to pan. Cook prawns for 2 minutes each side.

Step 3 of 3

Cut beef into thin strips. Arrange on plates with prawns, lettuce and herbs. Spoon over dressing. Sprinkle with spring onion.
