  • 2tablespoons mayonnaise
  • 1teaspoons lemon juice, to taste
  • 125grams skinless smoked trout fillets, broken into large flakes
  • 1/2 cucumber, sliced
  • 6 radishes, thinly sliced
  • 50grams watercress
  • 1teaspoons pepper
  • 2 slices bread, toasted (to serve)
  • 2tablespoons fromage frais

Method

Step 1 of 3

Mix together the mayonnaise and fromage frais with lemon juice to taste and season well with pepper.

Step 2 of 3

Arrange the trout, cucumber, radishes and watercress on a serving plates. Drizzle over the mayonnaise mixture and serve with plenty of toasted country-style bread.

Step 3 of 3

Thinly slice 1/2 cucumber and mix with 1 tablespoon each caster sugar and rice vinegar and a pinch of salt. Leave to stand for 25 minutes until lightly pickled. Drain and toss together with 6 thinly sliced radishes and a handful of flat leaf parsley, chopped. Serve the salad with 125 g smoked trout fillets, kept whole, and some steamed new potatoes.
