  • 1 bunch watercress, stalks removed and finely chopped
  • 1teaspoons black pepper
  • 1 pinch cayenne

Method

Step 1 of 2

Spread 8 slices of medium sliced wholemeal bread with softened butter. Combine 150g crab meat with 3 tbs mayonnaise, 1 bunch watercress, stalks removed and finely chopped, salt and pepper, 1 tbs lemon juice, 1 tbs grated lemon zest, and a pinch of cayenne.

Step 2 of 2

Spread evenly over 4 slices of bread and top with the remaining 4 slices. Cut off the crusts and discard. Cut into 6 sandwiches to serve.
