  • 8 fresh jalapeño chillies
  • 1/3 cup fine semolina
  • 1/2teaspoons smoked paprika
  • 1/2teaspoons onion powder
  • 500milliliter vegetable oil
  • 3 egg whites

Method

Step 1 of 3

Heat oil in a small, deep saucepan over medium-high heat.

Step 2 of 3

Combine semolina, paprika and onion powder in a medium bowl. In a separate bowl, whisk egg whites to form soft peaks. Fold lightly into semolina mixture.

Step 3 of 3

Working in batches, dip each jalapeño in batter to coat. Lower into oil and fry for 1-2 minutes or until golden and crisp. Remove with a slotted spoon. Drain on paper towel.
