- 1/4 cup firmly packed continental parsley leaves
- 1/2 cup extra virgin olive oil, plus extra
- 1 1/2 cup finely grated pecorino
- 2tablespoons rosemary leaves
- 1/3 cup pine nuts, toasted
- 2 cloves garlic
Method

In a food processor combine pecorino, pine nuts, parsley, rosemary, garlic and 1 tsp freshly ground black pepper. Process to a rough paste. Add oil and process until smooth. Transfer to a jar and cover in a thin layer of extra oil. Seal jar and refrigerate until ready to use.
