Pawpaw salsa
- 1 red chilli, deseeded (thinly sliced)
- 1 handful mint (shredded)
- 1/2 small red onion (finely diced)
- 1/4 pawpaw (finely diced)
- 1 lime (juiced)
- 750grams green prawns (deveined)
- 100grams butter (melted)
- 2tablespoons coriander (plus extrato serve)
- 250grams cherry tomatoes
- 2tablespoons Cajun seasoning
- 2tablespoons lemon juice
- 8 corn cobbettes
- 3 cloves garlic, crushed

Step 1 of 5
Preheat oven to 220°C. Cut 4 x 30cm pieces of foil. Set aside.

Cook corn in a large saucepan of boiling water for 10 minutes. Drain.

Meanwhile, combine Cajun seasoning, garlic, lemon juice, coriander and butter in a large bowl. Add corn, prawns and tomatoes. Toss gently to combine.

Divide mixture evenly among foil pieces. Fold to enclose filling and seal edges. Transfer to a baking tray. Bake for 15 minutes. Open parcels, return to oven and bake for a further 5 minutes or until prawns are cooked through.

Meanwhile, to make the salsa, combine all the ingredients in a small bowl. Open parcels and top with salsa and extra coriander to serve.
