  • 350grams swordfish, cut into 3-cm chunks
  • 1tablespoons olive oil
  • 1 lemon, sliced
  • 1 handful fresh bay leaves
  • 12 cherry tomatoes
  • 1 pinch salt
  • 1/4 cup mixed green salad (to serve)
  • 1 pinch pepper

Method

Step 1 of 3

Toss the fish in the oil to coat, then season with salt and pepper. Chop the lemon slices in half.

Step 2 of 3

Heat a griddle pan until smoking hot. Thread the fish chunks on to metal skewers, alternating with the lemon slices, bay leaves and tomatoes.

Step 3 of 3

Cook the kebabs on the griddle pan over a high heat for 4 minutes on each side, or until the fish is cooked through. Serve with a mixed green salad.
