Seafood & Fennel Salad With Anchovy Dressing

- 1 handful lettuce leaves (such as Cos)
- 1tablespoons white wine vinegar
- 6 whole anchovies in oil, drained and finely chopped
- 1 pinch sugar
- 1 handful fresh flat-leaf parsley, finely chopped
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1 fennel bulb, finely sliced
- 450grams ready-cooked mixed seafood (such as prawns, mussels, or squid rings, rinsed and dried)
- 6 whole anchovies in oil, drained
- 1 fresh hot green chilli, deseeded and finely chopped
- 1 handful fresh coriander, roughly chopped
- 1 lemon, wedges (to serve)
- 1 cup rice noodles, to serve
- 3tablespoons extra virgin olive oil
Method
Step 1 of 2
First, make the dressing. In a jug, whisk together the oil and vinegar. Add the anchovies, sugar, and parsley, season well with salt and black pepper, and whisk again.
Step 2 of 2
In a bowl, toss together the salad leaves, fennel, seafood, anchovies, chilli, and coriander. Pour over the dressing, and carefully mix together. Pile up in a shallow serving bowl, and serve with lemon wedges for squeezing over, and some rice noodles.
