- 1 large carrot, peeled
- 1/2 cup mint leaves
- 1 cup parsley leaves
- 4 spring onions, green tops only, chopped
- 1 zucchini
- 1 avocado
- 2tablespoons lemon juice
- 1/4 cup olive oil
- 1tablespoons apple cider vinegar
- 1/4 cup chives
- 1/4 cup pepitas
- 2 medium beetroot, peeled

Method
Step 1 of 3
For the super green dressing, place parsley, mint, chives and spring onion tops into a food processor and process until finely chopped. Scoop avocado flesh into processor. Add lemon juice, vinegar and olive oil and process until smooth. With motor running, add enough water to achieve a dolloping or pouring consistency. Season and set aside.
Step 2 of 3
Using a spiraliser, make noodles using the zucchini, carrot and beetroot. Place in a serving bowl with pepitas and extra parsley and extra mint.
Step 3 of 3
Serve salad drizzled or dolloped with green dressing.
