- 2 cloves garlic, crushed
- 20grams butter
- 1 large red apple, cored and cut into matchsticks
- 1/4 green cabbage, finely shredded
- 1/4 red cabbage, finely shredded
- 1 red onion, thinly sliced
- 200grams brussel sprouts, trimmed, outer leaves removed, halved lengthways
- 1/4 cup extra virgin olive oil
- 1teaspoons honey
- 1teaspoons grain mustard
- 1tablespoons olive oil
- 1tablespoons apple cider vinegar
- 250grams chestnuts
Method
Step 1 of 4
Score around the chestnut shells using the tip of a sharp knife. Place chestnuts around microwave plate in a single layer. Microwave on high for 2 minutes or until shells split. Cool slightly then remove shell and inner brown skin from nuts. Roughly chop.
Step 2 of 4
Heat oil and butter in a deep frying pan over medium heat. Add onion, garlic, sprouts and chestnuts, and cook for about 3 minutes until golden.
Step 3 of 4
Combine with cabbage and transfer to a serving platter. Top with apple.
Step 4 of 4
Whisk oil, vinegar, mustard and honey together in a jug. Drizzle over salad and serve immediately.
