- 1 pinch freshly ground black pepper
- 50grams packet pea shoots
- 1teaspoons lemon juice, to season
- 100grams semi-hard goat's cheese, broken up into pieces
- 400grams flageolet beans, drained and rinsed
- 25grams chives, finely chopped
- 2teaspoons white wine vinegar
- 1tablespoons fruity olive oil
- 1tablespoons fresh thyme leaves
- 1 pinch chilli flakes
- 2 1/2tablespoons olive oil (save 1/2 tbs for greasing)
- 1 pinch salt

Method
Step 1 of 2
Put the beans in a large bowl and add the chives, vinegar, olive oil, thyme, and chilli flakes and stir to combine. Season well with salt and black pepper.
Step 2 of 2
Stir through the pea shoots, taste, and add a squeeze of lemon if you wish. Transfer to a shallow serving dish and top with the goat’s cheese, a drizzle of olive oil, and a twist of freshly ground black pepper. If you are a meat eater, you might try a little Serrano ham as an accompaniment.
