Warm Broccolini & Paneer Salad With Green Goddess Sauce

- 1 cup frozen peas, thawed
- 1 avocado, flesh roughly chopped
- 1/2 cup mint leaves
- 1/2 cup flat-leaf parsley leaves
- 200grams paneer
- 2 bunch broccolini, trimmed
- 1/2teaspoons garam masala
- 1/2 lemon, juiced
- 1/2 cup plain Greek-style yoghurt
- 1/4 cup natural nibble mix, toasted (see tip)
- 1 1/2tablespoons olive oil
- 2tablespoons olive oil
Method
Step 1 of 4
To make green goddess sauce, place peas, avocado, yoghurt, mint leaves, parsley, lemon and olive oil into a food processor and blitz until smooth. Season to taste and set aside.
Step 2 of 4
Heat a barbecue or grill pan over high heat. Toss the broccolini with 1 tbs of oil and cook for 4 minutes, or until just tender and charred. Place on a plate and loosely cover with foil.
Step 3 of 4
Brush both sides of paneer with remaining oil and sprinkle with garam masala. Cook for 4 minutes, turning once, or until golden. Drain on kitchen paper and set aside. When cool, slice into logs and break into large chunks.
Step 4 of 4
Spread some of the sauce on a platter, top with broccolini and paneer and scatter with nibble mix. Serve with remaining sauce on the side.
