  • 2 cloves garlic, unpeeled
  • 1 fennel bulb
  • 1/2 bunch continental parsley, leaves picked
  • 6 radishes
  • 1/4 cup extra virgin olive oil
  • 1 pinch dried chilli flakes
  • 1 orange zested and juiced
  • 100grams feta, crumbled
  • 80grams hazelnuts, roasted, chopped

Method

Step 1 of 3

Preheat oven to 180°C.

Step 2 of 3

To make the dressing, roast 2 garlic cloves wrapped in foil with 1 tbs oil for 20 minutes or until tender. Cool, squeeze out flesh and mash in a bowl. Add chilli flakes, orange zest, orange juice and remaining oil. Season and mix to combine.

Step 3 of 3

Meanwhile, thinly shave fennel and radishes on a mandolin. Combine in a serving bowl with parsley, hazelnuts and feta. Drizzle over dressing. Serve.
