  • 300grams green beans, sliced on the diagonal
  • 2 royal gala apples, thinly sliced
  • 2 fennel
  • 1teaspoons honey
  • 1/2 cup sliced natural almonds, toasted
  • 2teaspoons dijon mustard
  • 1/3 cup light olive oil
  • 1/4 cup apple cider vinegar
  • 2tablespoons tarragon, chopped
  • 2tablespoons lemon juice

Method

Step 1 of 4

Blanch beans in boiling water for 30 seconds, drain and rinse under cold running water to refresh, set aside.

Step 2 of 4

Trim tops from fennel, reserving the fronds. Cut in half and remove core. Thinly slice crosswise with a sharp knife or mandolin. Toss fennel in half the lemon juice. Toss apple slices in remaining lemon juice.

Step 3 of 4

For the dressing, whisk all ingredients in a bowl until well combined, season to taste.

Step 4 of 4

Gently toss beans, fennel, apple and almonds with dressing to combine. Check seasoning and serve sprinkled with fennel fronds.
