  • 1/2 cup pecans, toasted
  • 1 pinch pepper (for seasoning)
  • 1/2 bunch kale, leaves shredded
  • 2tablespoons olive oil
  • 2tablespoons lemon juice
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 2

Whisk lemon juice, honey and curry powder together in a bowl. Slowly whisk in the oil until combined. Season. Quarter, core and slice apples. Toss through dressing to prevent browning.

Step 2 of 2

Place kale, pecans, celery, spring onions and currants into a bowl. Drain dressing over salad and toss to coat. Add apple and herbs. Toss gently. Serve.
