  • 2 corn cobs
  • 200grams watercress
  • 340grams jar roasted peper strips
  • 1/2 cup chilli dressing
  • 1/2 cup walnuts, roasted

Method

Step 1 of 4

Add corn to a saucepan of boiling water and cook for 2 minutes. Transfer to a bowl of chilled water.

Step 2 of 4

Add snow peas to boiling water and cook for 1 minute or until tender. Drain. Transfer to chilled water. Remove kernels from cobs. Transfer to a bowl.

Step 3 of 4

Thinly slice peas lengthways and add to corn with watercress. Drain roasted pepper strips and pat dry with paper towel.

Step 4 of 4

Add to corn mixture with roasted walnut halves. Toss to combine. Drizzle over mango and chilli dressing to serve.
