  • 1 avocado, peeled, pitted, sliced
  • 1 carrot, shredded
  • 1/2 small red onion, finely sliced
  • 1 lemon, 2 tbs juiced and rind of 1/2 finely shredded
  • 1/2 bunch kale, leaves stripped from stems, washed
  • 1/4 cup extra virgin olive oil
  • 2teaspoons dijon mustard
  • 1/2 cup walnuts
  • 1 clove garlic, crushed

Method

Step 1 of 3

Place kale in a bowl and, using your hands, massage for 1 minute, until it softens and changes colour from silvery green to a dark glossy green.

Step 2 of 3

Add carrot, onion and cranberries and toss well to combine. Add avocado and nuts.

Step 3 of 3

In a clean jar, combine oil, lemon juice, mustard and garlic together and shake well. Pour dressing over the salad and scatter with lemon rind just before serving.
