Braised Leeks With Smashed Peas

- 1 cup frozen peas
- 4 leeks, halved lengthways
- 1 lemon, zested
- 2tablespoons extra virgin olive oil
- 4 sprig fresh lemon thyme
- 1 cup chicken stock
Method
Step 1 of 3
Finely shred 1 x 4cm portion of 1 leek. Heat oil in a frying pan over medium heat. Add shredded leek and cook, stirring, for 5 minutes or until golden and crisp. Transfer to a plate lined with paper towel.

Add remaining leek to frying pan and cook for 3 minutes or until it has softened but not coloured. Add stock, zest and lemon thyme. Bring to the boil. Reduce heat to low and simmer, covered, for 15 minutes or until soft.

Meanwhile, place peas in a bowl and cover with boiling water. Stand for 2 minutes or until softened. Drain and roughly mash. Add peas to pan with leek and reheat for 1 minute. Season to taste. Serve garnished with fried leek and extra lemon thyme.
