Method

Step 1 of 4

Place 1/3 cup Plenty Macadamia Oil, 1 tsp lemon zest, 2 tbs lemon juice, 1/2 tsp caster sugar and 1 tsp chopped chives in a screwtop jar.

Step 2 of 4

Season. Seal with lid and shake until combined.

Step 3 of 4

Combine 120g pkt mixed salad leaves, 2 chopped Lebanese cucumbers and 1 sliced avocado in a bowl.

Step 4 of 4

Drizzle over dressing and serve.
