  • 2 bay leaves
  • 4 salmon (or ocean trout fillets)
  • 1teaspoons black peppercorns
  • 1 1/2 cup olive oil
  • 3teaspoons sea salt flakes
  • 1 1/2 cup vegetable oil
  • 80grams leafy salad mix (to serve)
  • 3 radish, thinly sliced (to serve)
  • 1 continental cucumber, chopped (to serve)

Method

Step 1 of 1

Line base of a large, deep frying pan with baking paper. Add the oils, bay leaves, peppercorns and sea salt. Place over low heat and heat to 80°C – you should be able to touch side of the pan with your hand (you can use a cooking thermometer). 2.Season the fish. Place skin-side down in pan and cook for 20 minutes. Lift out of pan using a slotted spoon. Remove and discard skin. Serve with salad.
