- 4 salmon fillets
- 1/3 cup basil leaves
- 2 lemon, rind finely grated, cut into wedges (wedges to serve)
- 1/3 cup parmesan cheese, grated
- 1 pinch pepper (for seasoning)
- 1 1/2tablespoons olive oil
- 8 slice pane de casa bread, crusts removed
- 4 cups salad leaves (to serve)
- 1 pinch salt (to taste)
- 4 punnet baby truss tomatoes
Method
Step 1 of 4
Preheat oven to 200°C. Line an oven tray with baking paper.
Step 2 of 4
Process bread in a food processor until roughly chopped. Add basil, parmesan and lemon rind. Process again until fine crumbs are formed. With motor running, add 1 1/2 tbs of the oil and process until combined.
Step 3 of 4
Place salmon on baking tray and top with crumb mixture, pressing on firmly. Bake for 25-30 minutes until fish is cooked through.
Step 4 of 4
Meanwhile, lay tomatoes on a second tray, drizzle with remaining oil and season with salt and pepper. Roast for the last 10 minutes of cooking time. Serve salmon with roasted tomatoes, salad leaves and lemon wedges.
