- 1 clove garlic, crushed
- 1.60-2kilograms salmon fillets
- 1teaspoons Dijon mustard
- 2 egg yolks
- 1/2teaspoons sea salt flakes
- 1 lemon, 2 tbs juiced
- 200milliliter vegetable oil
- 50mg saffron
Method
Step 1 of 2
Soak saffron threads in boiling water to release colour and flavour. Process egg yolks, garlic, mustard, salt and lemon juice in a small food processor until well combined. With the motor running, gradually add oil and process until thick and smooth. Stir saffron and water into aioli. Cover with plastic wrap and refrigerate until required.

Preheat a flat barbecue plate on medium heat. Lightly brush salmon with extra oil. Season with salt. Cook for 3-4 minutes each side for medium, or until cooked to your liking. Serve salmon with aioli.
