  • 800grams seedless watermelon, rind removed, diced
  • 2tablespoons small mint leaves
  • 4 pork loin cutlets, fat trimmed
  • 1tablespoons lemon juice
  • 2tablespoons pistachio dukkah
  • 50grams feta, crumbled
  • 1/3 cup sicilian olives, pitted, halved
  • 1/4 cup olive oil

Method

Step 1 of 2

Sprinkle pork on both sides with dukkah. Heat 2 tbs oil in a large frying pan over medium-high heat. Cook pork, turning, for 10 minutes or until browned and cooked through.

Step 2 of 2

Meanwhile, combine watermelon, olive, feta and mint in a bowl. Drizzle with lemon juice and remaining oil. Season with pepper. Serve salad with pork and garnish with extra mint.
