Mexican Seasoned Chops with Salsa & Chargrilled Tortilla Chips

- 1/4teaspoons mexican chilli powder
- 1tablespoons garlic steak seasoning
- 1 large avocado, diced
- 3 tomatoes, pulp removed, diced
- 1 small red onion, finely chopped
- 5milliliter virgin olive oil spray
- 1 lemon, juiced and rind finely grated
- 2teaspoons olive oil
- 4 tortillas, cut into 16 triangles
- 8 lamb forequarter chops
Method
Step 1 of 8
Preheat oven to 180°C.
Step 2 of 8
Line a baking tray with baking paper. Put tortilla chips onto tray and spray with olive oil. Bake for 10-15 minutes or until light golden and crisp.

Combine seasonings in a small bowl.
Step 4 of 8
Put chops onto a flat surface and sprinkle seasoning mix on both sides. Heat 1 teaspoon of oil in a large non-stick frying pan over a medium heat. Add 4 chops and cook for 3-4 minutes on each side or until cooked to your liking.

Transfer to an oven tray and place in oven.

Cook remaining chops.

Combine tomatoes, avocado, onion, lemon rind and juice in a bowl.

Serve chops topped with salsa and tortilla chips on the side.
