- 3 cloves garlic, crushed
- 1 large red capsicum
- 1 large brown onion
- 2tablespoons parsley leaves
- 1 bunch flat-leaf parsley
- 5milliliter virgin olive oil spray
- 420grams chickpeas
- 1 pinch pepper, for seasoning
- 100grams feta
- 180grams baby leaf salad mix
- 2teaspoons olive oil
- 500grams lamb loins boneless
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 3
Heat oil in a frying pan over medium heat. Add onion, garlic and capsicum. Cook for 5 minutes or until onion is soft. Stir in chickpeas and parsley.
Step 2 of 3
Meanwhile, heat a chargrill pan or grill over high heat. Spray lamb with oil spray and season. Cook lamb for 3 minutes each side, for medium rare, or until cooked to your liking. Transfer to a plate. Cover to keep warm. Set plate aside to rest meat for 5 minutes.
Step 3 of 3
Toss chickpea mixture with beetroot salad mix and transfer to plates. Top with lamb, feta and parsley. Serve.
