  • 1 orange, juice only
  • 1/2teaspoons mustard
  • 1/2teaspoons caster sugar
  • 75grams watercress
  • 1/4 cucumber, chopped
  • 2 oranges, peeled and segmented
  • 2tablespoons toasted walnuts
  • 1 avocado, peeled, stoned and sliced
  • 175grams smoked salmon strips
  • 4 gluten-free pitta breads, toasted

Description

This tangy summery salad pairs the fresh flavours of orange and watercress with creamy avocado, crunchy nuts and silky smoked salmon. 

Method

Step 1 of 3

Whisk together the oil, orange juice, mustard and sugar in a small bowl to make a dressing.

Step 2 of 3

In a large bowl, toss together the watercress, cucumber, oranges, walnuts and avocado.

Step 3 of 3

Toss with the dressing and smoked salmon and serve with the toasted pitta breads, if liked.
