For the creamy dressing
  • 1/2teaspoons white wine vinegar
  • 2tablespoons mayonnaise
  • 2tablespoons soured cream
  • 1-3teaspoons horseradish sauce
  • 1 pinch salt
  • 1 pinch pepper
  • 100grams cooked fresh beetroot, quartered
  • 75grams baby spinach leaves
  • 100grams smoked salmon slices
  • 4 slices crusty brown bread (to serve)

Mix together all the dressing ingredients, then season well.

Arrange the remaining ingredients on serving plates, then drizzle over the dressing. Serve immediately with slices of crusty brown bread, if you like.
