For the creamy dressing
- 1/2teaspoons white wine vinegar
- 2tablespoons mayonnaise
- 2tablespoons soured cream
- 1-3teaspoons horseradish sauce
- 1 pinch salt
- 1 pinch pepper
- 100grams cooked fresh beetroot, quartered
- 75grams baby spinach leaves
- 100grams smoked salmon slices
- 4 slices crusty brown bread (to serve)

Mix together all the dressing ingredients, then season well.
Step 2 of 2
Arrange the remaining ingredients on serving plates, then drizzle over the dressing. Serve immediately with slices of crusty brown bread, if you like.
