- 1 medium lemon, thinly sliced
- 50grams kale, washed and stems removed
- 2tablespoons canola oil
- 1 pinch salt

Description
A lightly seasoned and zesty baked salmon makes for a lighter fresh dinner option.
Method
Step 1 of 4
Pre-heat the oven to 170°C. Slice the salmon into 4 fillets and leave the skin on.
Step 2 of 4
Rub the fillets with 1 tbs of oil. Evenly spread the kaffir lime leaves on top and then place the thinly sliced lemons on top on that.
Step 3 of 4
Place the salmon on a baking tray and bake in the oven for 20 minutes or until nicely cooked through.
Step 4 of 4
Lightly fry the kale on a pan with 1 tbs of oil and seasoning for 1 minute while tossing. Remove salmon from the oven and serve with a choice of condiments on a bed of seasoned kale.
