- 1/4 cup grapeseed oil
- 1teaspoons sesame oil
- 1teaspoons ginger, grated
- 1 small red onion, finely sliced
- 300grams sugar snap peas, trimmed
- 1 bunch watercress
- 1/2 small wombok, trimmed, finely shredded
- 1kilograms cooked prawns, peeled, tails intact
- 1/4 cup lime juice (and 2 lime wedges to serve)
- 1teaspoons honey
- 1 clove garlic, crushed

Method
Step 1 of 4
Pick sprigs from watercress and wash in cold water. Shake off excess water, place into a bowl, cover and set aside to chill.
Step 2 of 4
Combine oil, lime juice, garlic, ginger, sesame oil and honey in a jar with a lid. Shake well to combine.
Step 3 of 4
Place prawns into a bowl. Add 2 tbs of the dressing and toss well to coat. Set aside. Place peas into a bowl. Pour over boiling water to cover. Set aside for 3 minutes, then drain and refresh in cold water. Drain well.
Step 4 of 4
Combine wombok and watercress on a platter. Top with prawns, peas and onion. Drizzle with remaining dressing and serve with lime wedges.
