- 24 cooked tiger prawns
- white sugar (to season)
- 2 cup sweet potato, diced
- 1 cup snow peas
- 3tablespoons extra virgin olive oil
- 40milliliter fresh lemon juice
- 1 pinch pepper (to season)
- 1teaspoons dijon mustard
- 60grams rocket leaves
- 4 slices pancetta
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 3
Oven-roast the sweet potato and pancetta until crisp. Allow to cool.

Assemble ingredients on a plate.

Mix together dressing ingredients and then pour over the salad.
