  • 2tablespoons vegetable oil
  • 8 scallops, shelled and cleaned, then cut into thick slices
  • 1/2 bunch scallions, thinly sliced diagonally
  • 1/2teaspoons ground turmeric
  • 3tablespoons lemon juice
  • 2tablespoons Chinese rice wine
  • 2 pieces preserved ginger with syrup, chopped
  • 1 pinch salt
  • 1 pinch black pepper

Method

Step 1 of 3

Heat a wok or large skillet until hot. Add 1 tablespoon of the oil and heat over medium heat. Add the scallops and stir-fry for 3 minutes, then remove with a slotted spoon to a plate.

Step 2 of 3

Add the remaining oil to the pan and heat over medium heat until the oil starts to shimmer. Add the scallions and turmeric and stir-fry for a few seconds. Add the lemon juice and rice wine and bring to a boil, then stir in the preserved ginger.

Step 3 of 3

Return the scallops and their juices to the pan and toss until heated through. Season with salt and black pepper to taste and serve immediately with salad, if desired.
