- 2 large tomatoes

- 1 large eggplant, cut into 8 x 2cm slices
- 2 avocados, halved, stoned and peeled

- 2tablespoons basil leaves, finely chopped
- 1tablespoons balsamic vinegar
- 20 raw tiger prawns, shelled, heads removed, and deveined

Description
Most of these impressive starters can be prepared ahead, then it’s just a simple assembly job before serving.
Method
Step 1 of 5
Trim the tops and bases off the tomatoes (save them for stock) and slice each in half horizontally. Heat 1 tbsp of the oil in a large, non-stick griddle or frying pan and fry the halves for 4-5 minutes each side, seasoning after turning, until cooked but not collapsing. Set aside. Wipe the pan with kitchen paper.

Add 2 tbsp of the olive oil to the pan and fry the eggplant slices for 8-10 minutes each side, seasoning them after turning, until golden brown and cooked through. Drain them on kitchen paper.

Dice the flesh of the avocados into small cubes and mix with the juice of 1/2 lemon, the basil, balsamic vinegar, and 1 tbsp of the olive oil.

To assemble the towers, put an 8cm wide and 4 cm high metal ring in the middle of a plate and add a tomato half, squashing it in slightly. Add a spoonful of the avocado mix, then 2 slices of the eggplant and finally another spoonful of avocado. Season every layer lightly as you build the tower.
Step 5 of 5
When you are ready to serve, quickly pan-fry the prawns in the remaining 1 tbsp of olive oil for 2-3 minutes, until they change colour to a vivid pink. Season them well and squeeze over the remaining 1 / 2 lemon. Top each tower with 5 prawns, nicely arranged, then carefully remove the ring to serve.
