Clams With Ginger & Lime Butter

- 90grams butter, softened
- 1 fresh ginger, 1 cm piece, finely chopped
- 1 lime, grated zest and juice
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 20 whole clams
- 6tablespoons coarse salt
- 1tablespoons coriander, finely chopped
Method
Step 1 of 5
Combine the butter, ginger, lime, and coriander and add salt and pepper to taste.
Step 2 of 5
Scrub the clams under running water. Discard any that are broken or not tightly closed.
Step 3 of 5
Place the clams in a pan with 2 tbsp water and cover with a lid. Steam over medium heat until open, 6 minutes. Shake pan occasionally to ensure even cooking. Remove clams with a slotted spoon. Discard any that are shut. Cool.
Step 4 of 5
Preheat grill. Open the clams with your fingers. Discard top shells. Loosen clams from bottom shells and place on a heatproof serving dish evenly scattered with salt. Divide the flavored butter over the clams in their shells.
Step 5 of 5
Place the clams under the grill until the butter melts and the clams are hot, 2 minutes. Serve hot.
