  • 16 raw peeled shrimp, with tails left on
  • 1/3 cup lemon oil
  • 24 shelled and cleaned scallops, corals removed
  • 1 mango, peeled, pitted, and cut into chunks
  • 1tablespoons olive oil
  • 4 cups mixed salad greens
  • 1/2 pink grapefruit, juice only
  • 1 lime, finely grated zest and juice
  • 1teaspoons honey
  • 1tablespoons raspberry vinegar

Method

Step 1 of 5

Make the citrus dressing by mixing together all the ingredients in a small bowl.

Step 2 of 5

Poach the shrimp in a saucepan of simmering water for 2 minutes, then drain.

Step 3 of 5

Put the scallops, mango, and shrimp in a bowl and pour 3 tablespoons of the dressing over them. Mix well to coat before threading them alternately onto 8 skewers.

Heat the oil in a large skillet over medium heat, add the skewers, and cook for about 5-7 minutes, turning and basting occasionally, until golden brown and cooked through.

Arrange the skewers on serving plates with the salad greens and serve with the remaining dressing.
