  • 4-6 tomatoes, skinned and finely chopped
  • 2teaspoons capers, rinsed and gently squeezed dry
  • 1 handful fresh flat-leaf parsley, finely chopped
  • 2 cloves garlic, grated or finely chopped
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 12 fresh sardines, butterflied
  • 1teaspoons olive oil
  • 1 lemon, juice only

Method

Step 1 of 3

Preheat the oven to 200°C. Put the tomatoes, capers, parsley, and garlic in a bowl. Season well with salt and black pepper, and stir well until everything is combined.

Step 2 of 3

Lay the sardines out flat, skin-side down, and spoon on the tomato mixture. Either roll up the sardines lengthways or just fold them over, then sit them all in a baking tray. Drizzle with the olive oil and lemon juice.

Step 3 of 3

Bake in the oven for 10-15 minutes until the sardines are cooked through. Garnish with extra parsley, if you wish, and serve with a crisp green salad.
